Ribs, ribs, ribs

Posted on 17 July 2019 No comments
Everybody seems to have her/his own recipe for cooking ribs- pork or beef, sliced or rack. Most would swear by recipes handed down through generations, or newly found on social media and other food sharing groups. A few would have just a few key ingredients, with the quality of the meat being more important. But whatever the ingredients are, the goal seems universal. The meat from ribs must be so tender they literally fall off the bone.
Below is a selection of recipes culled from different sites, some shared by well-known chefs, others by Filipina members of the Facebook page Domestic Workers Corner, who are all eager to help each other in impressing picky employers. Each one a must-try.

4-ingredient Sticky Ribs

From Marion’s Kitchen
Ingredients:
½ cup hoisin sauce
½ cup ketchup
½ cup sriracha chilli sauce (or any spicy sauce you prefer)
1kg  rack of pork spare ribs, cut into individual ribs
sea salt

Call us!

Instructions:
1. Preheat the oven to 120°C.
2. Combine the hoisin, ketchup and sriracha in a large bowl. Reserve ¼ cup in a separate small bowl.
3. Season pork ribs with salt, then add them to the large bowl and toss until each rib is evenly coated. Transfer to a baking tray lined with foil. Place another sheet of foil on top and seal the bottom and top pieces to form a tight foil ‘bag’. Cook in the preheated oven for 2 hours.
4. Remove the ribs from the oven. Turn the oven up to 200°C.

5. Transfer the foil bag to a heat-proof surface. Remove the top layer of foil, being careful because the steam inside the bag will be hot. Line the baking tray with another clean piece of foil. Transfer the ribs to the lined baking tray and generously brush each rib with the sauce you reserved earlier. Place the tray back into the preheated oven, uncovered, for 5-10 minutes or until the edges of the ribs are just starting to char.
6. Remove the ribs from the oven and pile onto a serving plate. Serve with plenty of napkins!

Spicy BBQ Beef

From the Asian Food Channel

½ Asian pear, finely grated
14 garlic cloves, finely chopped
200 ml soy sauce
3 tbsp sesame oil
3 tbsp soft brown sugar.

1. Mix all the ingredients except the beef ribs to make the marinade
2. Marinate ribs and refrigerate for at least 4 hours
3. Grill ribs until charred and cooked. (You may brush the ribs with some of the leftover while grilling)
4. Cut ribs across the bones and serve.

Steamed Pork Ribs with Tausi

From Marie de Guzman Bautista in DWC Its’all about food

Ingredients:
1 lb of pork ribs chopped into 2-inch pieces
Brown sugar
White pepper powder
Cornstarch
Dash of Shaoxing wine (optional)
Light soy sauce
Sesame oil
Tausi or black bean sauce
Minced garlic
Few pieces red chili (optional)
Chopped spring onion

Procedure:
1. Marinate pork ribs with brown sugar, white pepper powder, cornstarch, Shaoxing Wine(optional), light soy sauce, sesame oil, tausi and minced garlic for at least 1 hour to obtain good taste and better result.
2. Transfer to a steaming dish. Add red chili to enhance the flavor (optional).
3. Steam over high heat (obtained by boiling water for 20 mins.) Could also be done while cooking steamed rice.
4. Garnish with chopped spring onions.

(Another DWC member, Prinslyn Rivera Bentillo offered a simpler recipe consisting of dry black beans, garlic, ginger, corn starch, oil, light soy sauce, dark soy sauce, sugar and salt. Just estimate the proportion of all the ingredients, she said. Mix all ingredients then use as marinade for the chopped ribs, then steam).

Hello, Love, Goodbye, malapit nang ipalabas

Posted on No comments

“She had to know the pain and suffering ng isang OFW,” sabi ng batikang director.

“E, mabigat yung eksena, siyempre bunganga ako, ‘Tanggalin ‘yan!

Call us now!

“We share the same passion, which is acting,” sabi pa niya.

Whether they kissed or not, it doesn’t matter. The movie can stand on its own.”

“But as of this moment, really, I’m very happy and I’m very thankful na, ayun na nga…” sabi niya sa press conference ng kayang bagong pelikula, ang “Ang Babae sa Septic Tank: The Real Untold Story of Josephine Bracken.”
Eugene Domingo

“Kailangan sumasabay at sumasakay.

“She was naiiyak because we have always given our children a modest budget for shopping, and they aren’t spoiled and have very few expensive things,” sabi pa ni Sharon sa kanyang Instagram post.

“That way, they know the value of hard-earned money and appreciate it so much when they receive well-made investment pieces,” dagdag pa niya.

Filipina sues employer’s elderly husband over indecent ‘massage’

The EOC is handling the sexual harassment case
A 25-year-old Filipina has filed a sexual harassment charge against her employer’s 72-year-old husband for allegedly forcing her to massage his penis on two occasions last month.

The first incident allegedly happened just two days after the young helper had arrived at her employer’s house in Pokfulam on Jun 21. The defendant repeated the act four days later, causing Maggie (not her real name), to flee.
With help from Antonio Villafuerte, officer-in-charge of the Philippine Overseas Labor Office, Maggie sought police help, but officers reportedly refused to book the elderly man for indecent assault because, accordingly, he did not use force or threat.

The police instead advised Maggie to file a complaint for sexual harassment with the Equal Opportunities Commission.
Maggie also filed a claim at the Labour Labour Relations Division on Jul 15 after no settlement was reached in an initial meeting between her and the employer’s family on Jul 7.

Villafuerte said the maid is seeking compensation for damages for the elderly man’s misdeed.

But the employer’s family was only willing to offer a month’s wage, another month’s pay in lieu of notice, air ticket and meal allowance.

“A conciliation meeting is set for Aug 2 at 2:30pm. After that, if no settlement is reached, the case will be elevated to the Labour Tribunal,” Villafuerte said.

Records show the Filipina arrived from Manila on Jun 21. Two days later, the suspect came home in the afternoon and took a shower, got out of the bathroom naked and asked the helper for a body massage.

The maid allegedly refused, saying it was illegal and not part of her work, but the man told her it would be just between the two of them.

Maggie obeyed out of fear until the man demanded that she massage his genitals. She rang up her employment agency afterwards, crying and begging to go home.

But the agency told her to wait and make a video recording the next time the man ordered her to massage him again.

On Jun 27, the elderly man asked for another massage that included his organ and the maid was able to get a video clip, albeit sloppy because she was nervous and scared.

She waited for a chance to escape and did so when she went out to dump the rubbish.

The next day, Maggie called up the Overseas Workers Welfare Administration to seek advice. She later met with Villafuerte who asked her to write down her complaint.

Pinay hunts down employer who owes her unpaid wages

Posted on 16 July 2019 No comments

By Vir B. Lumicao

The Tribunal could not proceed with the case in the absence of the employer

A Filipina helper is on a manhunt for her former employer who allegedly owes her $8,000 in unpaid wages, return air ticket and one month salary in lieu of notice.

Maricel Ulay launched her search for Chu Wa-cheun after the employer failed to show up for the hearing of the helper's claim at the Labour Tribunal earlier today, Jul 16.

It was the first setback for Ulay after terminating her contract with Chu, as she had previously recovered Php45,000 from the employment agency in Manila which had placed her for the Hong Kong job.

Call us!

Ulay waited in court until 11:30am when Presiding Officer G.T. Lung started hearing her claim, but her former employer was nowhere to be found.

Lung said he could not proceed with the case because the court notice that was sent to the defendant in the address supplied by Ulay was returned to the Tribunal as Chu could not be found there.

Ulay said the address was supplied by Chu in their employment contract.
Lung advised the Filipina to try to find the defendant in her new address and hand the court notice and the bundle of claim documents personally to her.

In the meantime, Lung said he was withdrawing Ulay’s claim until Chu could be located.

Ulay said after the hearing that she terminated her contract on Apr 20, after only four months with Chu, because the employer had made her work illegally in her laundry shop in Sheung Shui.

After the hearing, volunteers for the Mission for Migrant Workers who accompanied Ulay to the Tribunal tried to help her locate on Google maps Chu’s laundry in a remote village in Sheung Shui.

The maid did not know the name of the street but remembered the minibus number and the route, which she said was 10 minutes away by bus from the MTR station.

The volunteers eventually found the street but could still not pinpoint the laundry’s exact location because, as Ulay said, it was on a numberless yard fenced off with GI sheets.

Ulay, a friend and the owner of her Hong Kong agency decided to set off for Sheung Shui to locate the laundry, and serve the court documents to her missing employer.

Earlier this month, Ulay managed to recover the Php45,000 charged her by her Philippine agency, with help from outgoing Labor Attaché Jalilo dela Torre. Ulay said the agency paid back the money to her mother in the Philippines on Jul 7.
