Rousing send-off gets Labatt to rethink retirement

A heartwarming impromptu farewell party given him by some 200 Filipino community leaders and officers of the Consulate, as well as his staff at the Philippine Overseas Labor Office, has caused Labor Attache Jalilo dela Torre to reconsider his decision to retire.

“Half of my mind is really convinced already to retire kasi nga napaka-stressful yung trabaho namin, especially dito sa Hong Kong, although I’ve been happy and enjoyed doing it, serving the OFW community here,” Labatt Jolly said at the party held in the evening of his last working day, Jul.7

“(Pero) dahil sa ipinakita ninyo, parang nabuhay uli ang aking loob na isulong pa rin ang pakikibaka natin. I haven’t closed the doors on Riyadh, particularly because the community there is also egging me to go there,” the labor official said.

Dela Torre was advised only three days earlier by the Department of Labor and Employment in Manila that he had to leave for Riyadh, Saudi Arabia, after a tumultuous three-year stint in Hong Kong.

He said he is being pressured by his family to quit, and he has given this serious thought since going to Riyadh at this time is like “jumping from the pot into the fire” because the declining oil prices could lead to job losses for many Filipinos there.

Among those who attended the hastily arranged send-off was a full contingent of officers from the Consulate led by Consul General Antonio A. Morales, who paid tribute to Labatt Jolly.

“Alam po ninyo, ito ay pangwalo kong assignment sa iba’t ibang bansa sa mahigit 20 taon pero ngayon lang ako nakakita na ang community ay nagkaisa para i-request ang extension ni Labor Attaché,” Congen Morales said.

He was referring to two well-covered protests by Filcom leaders last year that called for Labatt dela Torre to be retained in Hong Kong, after Labor Secretary Silvestre Bello III ordered his recall for alleged favoritism in accrediting employment agencies.

He noted that a group of Hong Kong lawyers and a former Legislative Council member had given a send-off for Labatt Jolly a few months ago, along with a request for his extension.

Jokingly, he said that before Hongkongers learned to protest against the extradition bill, Filipino workers here had already marched on the streets calling for Labatt Jolly’s extension.

“But, kidding aside, it’s an honor for me to have worked with the Labor Attaché, ang puso po niya ay nasa manggagawang Pilipino rito sa Hong Kong at mapapatunayan nyo, kaya kayo nandito ngayon,” Congen Morales said.

He and other PCG officers later handed Labatt dela Torre a certificate of appreciation “for having served with competence, professionalism, integrity and dedication” from 15 Mar 2016 to 18 Apr 2018 and 20 Oct 2018 to 8 Jul 2019.

Also paying tribute was the newly designated officer-in-charge of Polo, Tony Villafuerte, who thanked his former superior for the reforms that he initiated, both at work and in the community, and said Dela Torre only had the interest of OFWs at heart.

He led fellow officers from Polo and the Overseas Workers Welfare Administration in presenting a plaque of appreciation to their departing boss.

Notable among the Filcom leaders who came were those from the militant left, led by Eman Villanueva of Bayan Muna Hong Kong and Macau and Dolores Balladares-Pelaez of United Filipinos in Hong Kong.

Pelaez noted that her group, which is known for its critical stance towards the government on issues relating to migrant workers, had never before joined a rally calling for the retention of a government official, but did so for Labatt dela Torre.

“Ibig sabihin lang po, siya ay isang huwaran, isang mahusay na kawani ng gobyerno si Labatt na magandang tularan ng iba pang mga nagseserbisyo sa gobyerno,” she said.

Villanueva warned that migrant workers need to be on guard and to continue the reforms Labatt Jolly had initiated and, if need be, to take to the streets to fight for these reforms. 

Foremost among Dela Torre’s accomplishments that they cited was his firm stance on banning dangerous window cleaning by foreign domestic workers, which forced the Hong Kong government to make this part of their standard employment contract.

Marites Nuval, GA president said, “Naranasan ko ang magwelga, at dahil doon naranasan ko rin ang malagay sa watchlist noong dumalaw dito si Pangulong (Rodrigo) Duterte.”

GA chairman Leo Selomenio who spearheaded the preparations for the last-minute farewell, expressed a wish for Dela Torre to return to Hong Kong in the future.

“This is not goodbye, sana magkita uli tayo one day,” Selomenio said.

Leaders from several Filcom organizations also gave farewell messages, including Rodelia Vilar of Domestic Workers Corner, Elaine Espinosa of Mindanao Federation, Reggie Buen of Luzon Alliance, Nerissa Gimena of One Visayas, Myrna Carigada of Sacoma, Carmen Pilar of CAR, Edna Liboon of National Organization of Professional Teachers Hong Kong, and Art Buban of Bicol Migrants Association (HK).

This writer thanked Labatt dela Torre for his friendship and for keeping an open door to The SUN on issues affecting Filipino migrant workers in Hong Kong.

In turn, Labatt Jolly thanked everyone, particularly the Filcom leaders, for supporting him in pushing reforms for the welfare of the workers. He told them to unite and protect the gains they have made.

Labatt dela Torre expects to stay in Hong Kong for a few more days to wrap up his affairs and decide whether to take up the Riyadh post, or head home to Cebu.

Filipino pork favorites

This issue we will focus on three of the Filipinos’ well-loved pork dishes: tokwa’t baboy, pata with saba banana, and lechon kawali with a twist. All are easy to cook, with many common ingredients which are found in most Pinoy kitchens: salt and its often preferred alternative, patis; (or fish sauce), soy sauce or toyo, vinegar and pepper, either whole or ground.

For the tokwa’t baboy, the pig ears give the dish an extra crunch, and the tofu, texture. But the one that puts it all together and make it as an all-time favorite among Pinoys is the sauce, which is made up of several key ingredients: salt, sugar, vinegar and soy sauce, and the spices: pepper, onion and chili. Spice as you like, and use the sauce either as a side dip, or pour and combine with the pork and tokwa or tofu before serving.

For the pata, most important is keeping the pork fork-tender so its juices combine well with the sauce, which is essentially the same as what we use for our favorite adobo. The fried saba adds the sweet and tangy taste to the dish so it’s indispensable, even if you’re cooking far from home.

Last on the list is everyone’s favorite, lechon kawali, but given a surprise glazing just before serving. As many kitchen habitués know, lechon kawali is easy enough to cook – boil it with salt, and pepper (garlic is optional) until it has absorbed the spices and becomes tender but firm enough for deep frying. After this initial step people do their own take on how to keep the pork tasty and crunchy just before serving. Some would recommend, as in this recipe, to keep the fried pork in the refrigerator in the freezer for a few hours before re-frying, while others say it’s best fried after boiling. Whatever your preference, adding the extra glaze from the combination of honey, lemon and patis is a must-try.

Have fun, but remember to keep your cholesterol level within manageable levels.


Tokwa’t Baboy 

Ingredients
1 lb pig ears
1 lb pork belly liempo
1 lb tofu extra firm tofu
1 1/2 cup white vinegar
1/4 cup soy sauce
1 tablespoon sugar
1 tablespoon salt
1 tablespoon whole peppercorn
1 piece onion sliced
2 stalks scallions cut in 1/2 inch length
1/8 teaspoon ground black pepper
5 cups water
2 cups cooking oil

Instructions
1. Pour water in a pot and bring to a boil
2. Add salt and whole peppercorn
3. Put-in the pig’s ears and pork belly then simmer until tender (about 30 mins to 1 hour)
4. Pour cooking oil in a separate pan and allow to heat
5. When the oil is hot enough, deep-fry the tofu until color turns golden brown and outer texture is somewhat crispy
6. Slice the fried tofu in cubes, then slice the boiled pig’s ears and pork belly into bite-sized pieces. Set aside.
7. Combine the sugar, salt, soy sauce, and vinegar in bowl. Stir. Microwave for 1 minute.
8. Add the ground black pepper, onions, green onions, and chili pepper.
9. Transfer the sauce in a serving bowl. Place the sliced meat and tofu in a serving plate with the bowl of sauce by the side

Cooking time: 1 hour 30 minutes
Serves 6 people

Pata Saba

Ingredients:
500 g pork pata
4 pcs fried saba bananas, cut into 2 parts
1 bunch dried banana blossoms
1/4 cup vinegar
1/4 cup soy sauce
1/4 cup brown sugar
1 tbsp peppercorn
1 pc bay leaf
2 cups water
1tbsp patis (for dipping)

How to cook:
1. Place all the ingredients (except saba bananas) in a pressure cooker.Apply heat and simmer over low heat for 30 minutes.
2. Add the fried saba bananas.
3. Continue cooking, uncovered, until the sauce has reduced to desired consistency.
4. Remove from heat and transfer to a serving bowl.
5. Serve with patis and steamed white rice. Enjoy!

Calamansi and Patis-Glazed Lechon Kawali 

Ingredients:
1 kilo whole pork belly (liempo)
salt, to taste
pepper, to taste
oil, for deep-frying
1 cup honey
1 tablespoon patis
calamansi juice, from 3 pieces of calamansi

Procedure: 
1. In a pot, pour enough water to cover the liempo. Add salt and pepper, then boil for 30 to 45 minutes until the pork is fork tender.
2. Let the meat cool and rest in the refrigerator for an hour or overnight.
3. In a pre-heated wok, deep-fry the liempo until the skin is crisp. Drain on a cooling rack.
4. In a separate bowl, put together honey, patis and calamansi until well-combined.
5. Pour the sauce over the lechon kawali before serving.

Manager aims to make SCC Divas shed DH identity

SCC Divas may be the only all-Filipino women’s cricket team in the world, says its manager, but it still known in Hong Kong as a group made up of domestic workers.

Manager Animesh Kulkarni says his ultimate goal is to make the team known simply as Filipinas, not as domestic helpers. He also plans to have one of the SCC Divas players drafted into the Hong Kong national team within the next three years.

“We will continue to admit and train Filipinas who want to join the team as our contribution to Hong Kong cricket. But my ultimate goal is make you known not a team of domestic helpers but of Filipinas,” Kulkarni told the team after the awarding.

SCC Divas was crowned champions for the second-year running in its division in Hong Kong. The team ruled Cricket Hong Kong’s Women’s Development League for the second consecutive year via a clean sweep of the four-team division in the 2018-2019 season that ended in April.

Cricket Hong Kong handed the trophy to the SCC Divas’ founder-captain Josie Arimas and vice-captain Jennifer Alumbro at the Awarding Night in Regal Oriental on Jun 21.

“We are now starting,” Kulkarni said when asked about when he is going to tap into the Filipino resident community to boost the team. 

Assistant manager Chandrasekhar Parameswaran said the team had become a platform in the past two years for attracting more Filipinas to cricket.

“We’ve got a good pool of 30 to 50 players from the Philippines who are already here and we’ve built a core of it. Now, through your platform, we would like to invite Hong Kong Filipinos …to practice every Sunday… and they could come through the system,” said Parameswaran.

Kulkarni praised Hong Kong-based SCC Divas as unique in that it is the only Filipina team in the whole world, there being no other team of Filipina cricketers in India, England, Australia, New Zealand or elsewhere.

“SCC Divas is the only team in the world for the associate or regular members (of the International Cricket Council) having an all-Filipina team. Other development we are starting, but we will carry on and we will go global,” said Kulkarni.

Kulkarni told the team after the awarding that he is trying to arrange matches for them against the Philippine women’s cricket team in Manila in December.

His statement ties in with plans for bilateral and trilateral tournaments in December at the Philippine Cricket Association ground in Dasmariñas City, Cavite. The one-day internationals were disclosed by PCA manager Faisal Khan in a message to Arimas.

Khan said some of the Divas players would be drafted into the Philippine national team that will play the Korean, Vietnamese and Singapore national teams in December.

Kulkarni said that SCC Divas played better in the recently ended season than in their maiden season that closed in 2018.   

“Very good improvement and we are hoping that next year will be much better than this year,” said Kulkarni.

Ilongga hikers raise money for native weavers

Two groups of migrant workers who call themselves “Ilongga Hikers” held two separate  hikes last month to raise money for a unique project, the construction of a weaving center for Bagobo-Tagabawa weavers in Bansalan, Davao del Sur.

The hikes, held over the weekend on May 25 and May 26, raised enough money for the purchase of materials such as bamboo, nipa shingles and others for a building that can accommodate five weavers in a destitute community.

The materials these weavers produce from abaca will be turned into fabrics that can be used for clothes and bags, and provide them with livelihood.

The hikers who were mostly based in Hong Kong, trekked for about four hours to cover a 7.4- kilometer trail to Mt. High West, which lies between Victoria Peak and Mount Davies. Its peak offers a stunning 360-degree view of the city.

The hike is categorized as suitable for beginners, so more people were able to join the charity fundraiser.

Hikers were advised to bring a towel, phone, drinking water, hat or umbrella, sunscreen, extra shirt, food to share, and to wear comfortable hiking shoes.

Alona Tercepona, who led seven hikers on the first day, a Saturday, encouraged the group to keep moving with words like, “Hike while you can, create memories that last for a lifetime.”
Despite the overcast weather, the group happily trudged along and was rewarded by the rare and beautiful scenery that greeted them from the mountain top.

One of the hikers, Jenelyn Malana, said: “Both my fitness goal and the desire to help  those who are in need was accomplished. I was able to nourish my body and meet  like-minded strangers with the same goals who became friends.”

Cheryl Gomez, who did the hike along with 19 others, including two Korean tourists, said: “Let us unite, get fit together and be a blessing to others. Any amount will do and for those who cannot hike but would love to help, we are also accepting monetary donations.”

Jay-R, a Filipino tourist who joined the hike, was impressed by the hospitality of the migrant workers who organized the event. “The OFWs in HK are really accommodating. Even if they didn’t know me personally they were hospitable and generous. I enjoyed hiking with them,” he said.

Another hiker, Sheila Gamo, said she was grateful for the “refreshing, holistic ang meaningful hike.”

The rainy day did not stop them having fun, said Ligaya Lorilla. “Hindi man nasunod ang plano dahil sa ulan, super enjoy naman ang mga girls. Everyone had a warm smile for each other, na para bang matagal na kaming magkikilala. Basa na kami pero tuloy pa rin ang hike pagkatapos ng ulan. Thanks a lot for my new friends, mabuhay kayo.”

Ana De Vera said viewing Hong Kong island from the peak was breathtaking. Plus, she very much enjoyed the company of everyone.

Their Korean visitors were equally jubilant, noting that “At first the ladies were quiet but after drinking soju, a korean liquor, they started telling stories”.

Ilongga Hikers say they are an amateur group that loves hiking, and would like to invite all like-minded people to join them in their adventures. But they warn that every joiner must assume responsibility for their own actions and safety.
